Turkey Veggie Soup

Ingredients:

  • Turkey

  • Carrots

  • Broccoli

  • Celery

  • Onion

  • Jalapeno or Bell Peppers

Homemade Broth (optional)

  • Turkey Bones

  • Carrots

  • Celery

  • Onions

  • Garlic

  • Herbs

Instructions:

Broth

  1. Add all ingredients to a large pot.

  2. Cover with water.

  3. Cook on medium for about an hour. The longer it cooks, the more intense the flavor will be.

  4. Add salt and pepper to taste.

  5. Let cool and strain.

  6. Broth can be stored in the freezer for up to 6 months.

Soup

  1. Chop all the ingredients.

  2. In a large pot, add chopped onions and carrots.

  3. Add the broth.

  4. Cook for 10 minutes and add peppers and broccoli.

  5. Cook for another 10 minutes and add turkey and celery.

  6. Add salt and pepper to taste.
