I am a HUGE fan of everything cranberries so a few months ago, I signed up to enter the Cape Cod Select Recipe Challenge.
2 bags of Cape Cod Select premium frozen cranberries were mailed to me. I was to make up 3 recipes. One for each of the following categories: beverage, entree & baking. See all of my recipes below.
Here is my beverage entry.
Christmas Cranberry Cocktail Recipe
- 1 cup Cape Cod Select premium frozen cranberries
- 3 oz Lambrusco Sparkling wine
- 1 cup Brown Sugar
- 1 cup of water
- 1 oz Lemon juice
- 2 oz Bourbon or Whiskey
- Cinnamon stick
- 1/2 teaspoon of Nutmeg
Cranberry Simple Syrup: In a medium sauce pan, combine Cape Cod Select premium frozen cranberries, brown sugar, water. Cook for 15 minutes until cranberries pop and liquid becomes a little thick. Cool and strain.
In a shaker, add ice, Bourbon, lemon juice Cranberry Simple Syrup. Shake and pour into cocktail glass. Top with Lambrusco wine, add a cinnamon stick and sprinkle nutmeg.

Cranberry Wings Recipe
- 2 cups Cape Cod Select premium frozen cranberries
- Salt & Pepper
- Cayenne Pepper
- Chicken Wings
Cranberry BBQ sauce: In a medium pot, add 2 cups of water, frozen cranberries, and honey. Cook until the cranberries pop. Whisk in ketchup, mustard and salt and pepper. Cook until there is a "sauce consistency." Set aside.
Bake or fry wings until they are cooked all the way through and crispy. Pour sauce over wings.

Oatmeal Cranberry Streusel Recipe
Crust & Topping
1 cup of quick oats
1 cup of wheat flour
1/2 cup brown sugar
1/4 teaspoon of sea salt
1 Teaspoon of cinnamon
1/4 teaspoon of baking soda
1 Teaspoon of lemon juice
1/2 stick of butter
Chopped almonds (almonds, walnuts, pecans) *Optional
1 1/2 cups of Cape Cod Select premium frozen cranberries
1/2 cup of brown sugar
2 table spoons of whole wheat flour
1 teaspoon of vanilla
1 teaspoon of lemon juice
How to prepare:
Preheat oven to 325°.
For the crust: In a mixing bowl, add oats, flour, brown sugar, salt, cinnamon, baking soda. Mix while pouring melted butter and lemon juice over flour mixture. Mix until moist. Save half of the mixture for topping.
Use a square baking dish and pack half of the mixture on the bottom. Bake for 15 minutes.
While the crust is baking, prepare the filling.
Combine cranberries, brown sugar, wheat flour, vanilla, and lemon juice in a sauce pan. Cook until cranberries pop. Remove crust from oven and pour cranberry mixture over crust.
Add chopped nuts to the remaining flour mixture. Sprinkle over the cranberry mixture.
Bake at 325° for 35 minutes.
Let cool and serve with cool whip or Greek yogurt. Sprinkle cinnamon on top.
