Beer-Battered Cod Tacos

Ingredients

What you need:

  • Fresh or frozen cod (thawed and dried)

  • 1 beer

  • 1 cup of flour

  • Vegetable Oil

  • Flour tortillas

  • Seasonings: Old Bay

  • Cabbage Slaw: Red and White Cabbage, cilantro, lime juice, cumin, salt, pepper and cayenne

  • Cilantro Crema - Blend cilantro, greek yogurt, cream cheese, olive oil, salt and pepper

Instructions:

  1. Heat oil in a frying pan to 350°.

  2. In a large bowl, add flour and old bay.

  3. Slowly pour in beer and wisk. You may not need to use the entire bottle. The texture should be close to pancake batter.

  4. Season the cod with old bay.

  5. Dredge the fish in the batter and gently lay the fish in the hot oil.

  6. Cooking time should be about 5 minutes.

  7. Warm the tortillas on an open flame. There should be a nice char after about 15-30 seconds.

  8. Build the taco with fish, slaw and cilantro crema
