$15 Wine & Dine: Kale Salmon Cakes & Chenin Blanc

Ingredients from Wegman’s

What you need:

  • Canned Salmon $4.49

  • A carton of eggs $1.99

  • Quaker Quick Grits $2.39

  • Chicken Broth $2.49

  • Tuscan Kale $2.99

  • Cream Cheese $2.49

    Total = $16.84

  • From previous purchases: Sliced Muenster , Sliced Mozzarella, Onion

  • Homemade bread crumbs from loaf of bread.

  • Seasonings: Old Bay Seasoning, Trader Joes Salmon Seasoning

Instructions:

  1. Chop onion and kale. Cook with olive oil and Old Bay for about 12 minutes.

  2. Toast 2 slices of bread for breadcrumbs. Chop or grind.

  3. In a large bowl, add canned salmon, kale, onions, 2 eggs, seasonings, and breadcrumbs. Fold together until the eggs are completely mixed in.

  4. Make patties out of the mixture and sear on both sides for 2 or 3 minutes.

  5. For grits, add 2 cups of broth and one cup of water to a pot.

  6. Bring to a boil and turn the fire down. Slowly whisk in grits. Continuously sir.

  7. When the grits start to thicken, add butter and cream cheese. Keep stirring.

  8. When the grits are done, turn the fire off and add cheese.

  9. Serve the kale-salmon cakes on top of the grits and you have a meal!
