Lamb Meatball Sub & Napa Cab

Ingredients

What you need:

  • Ground Lamb

  • Breadbreads

  • Chopped Onion

  • Chopped Peppers

  • Mint

  • Egg

  • Feta

  • Greek Yogurt

  • Mozzarella

  • Store-bought tomato sauce

  • Hoagie Rolls

  • Seasonings: Cumin, paprika, onion powder, garlic powder, salt, cayenne pepper

  • Optional: Spinach Pesto - Blend spinach, walnuts, parmesan, lemon juice, salt and pepper.

Instructions:

  1. Sauté chopped onion and season with all seasonings.

  2. In a large bowl, add cooked peppers/onions, ground lamb, breadcrumbs, mint, feta, greek yogurt, and 1 egg.

  3. Add all seasonings to the bowl.

  4. Massage together

  5. Make golf ball sized meatballs.

  6. Sear the meatballs in a large frying pan for about 10 minutes on both sides.

  7. Season the tomato sauce with all of the same seasonings. Add a little cayenne pepper. Cook for at least 15 minutes.

  8. Dip the meatballs in the sauce and them to a toasted hoagie roll.

  9. Top with mozzarella cheese and pesto. Broil to melt the cheese.

  10. Garnish with mint.
