Chicken Liver Paté & Gamay

Ingredients from Trader Joe’s

What you need:

  • Chicken Liver

  • Heavy Cream

  • Sour cream or cream cheese (optional)

  • Unsalted Butter

  • Chopped Onion & Garlic

  • Thyme

  • Seasonings: Salt, Pepper, Cayenne

Instructions:

  1. Rinse the livers with cold water and drain well.

  2. Add about 2 tablespoons of butter and add chicken livers.

  3. Add cayenne, salt, and pepper, and sauté the livers until completely done.

  4. Remove livers from the pan and set aside.

  5. Add another 2 tablespoons of butter to the pan and sauté the garlic and onions.

  6. With a blender or food processor, blend the livers, garlic, and onions.

  7. Add heavy cream and cream cheese a little at a time until smooth.

  8. Taste and add more seasonings if needed.

  9. Add the paté mixture to a jar with lid. Before you close the lid, cover the paté with plastic wrap and make sure the plastic touches the paté. (this prevents a fatty layer from forming)

  10. Refrigerate for 2 hours or overnight.

  11. Garnish with thyme.

  12. Serve with crackers or bread
