Fall Beet Salad
Ingredients
- 3 Golden Beets 
- 3 Red Garden Beets 
- 1/4th cup Goat Cheese 
- 1/4th cup Lettuce 
- 2 Tbsp Vinegrette 
Seasonings to Taste
- Salt 
- Pepper 
Instructions:
- Wash and scrub the beets and remove the stems. 
- Separate the beets by type and wrap each set in foil. The colors will bleed on each other if they are wrapped together. 
- Air fry the beets for 30-40 minutes. 
- When cooled, the peels should be removed easily. 
- Slice the beets 
- Add a layer of lettuce, and add the beets. 
- Sprinkle with salt and pepper 
- Dress with goat cheese and drizzle with vinegrette.
