Fall Beet Salad
Ingredients
3 Golden Beets
3 Red Garden Beets
1/4th cup Goat Cheese
1/4th cup Lettuce
2 Tbsp Vinegrette
Seasonings to Taste
Salt
Pepper
Instructions:
Wash and scrub the beets and remove the stems.
Separate the beets by type and wrap each set in foil. The colors will bleed on each other if they are wrapped together.
Air fry the beets for 30-40 minutes.
When cooled, the peels should be removed easily.
Slice the beets
Add a layer of lettuce, and add the beets.
Sprinkle with salt and pepper
Dress with goat cheese and drizzle with vinegrette.
