Lamb Chipotle

Ingredients

  • 1 Boneless Leg of Lamb

  • 4 Dried Chipotle Peppers

  • 2-3 cups of hot water

  • Seasoning: 3 tbsp Salt, 1 tbsp Pepper, 1 tbsp Smoked Paprika, 1 tbsp Chili Powder

Instructions:

  1. Preheat the oven to 275°.

  2. Rehydrate the Chipotle peppers by soaking them in 2-3 cups of hot water for 15 minutes.

  3. Slowly add the peppers and water to a blender. On low, blend until smooth. Set aside.

  4. In a small bowl, combine all the mentioned seasonings and season both sides of the leg of lamb.

  5. Pour the Chipotle sauce over the lamb.

  6. Heat a cast-iron skillet to medium-high. Sear the lamb on both sides for 3 minutes. Be careful, as the spices will fill the entire kitchen.

  7. Transfer the cast iron skillet to the oven. Bake the lamb for 15-20 minutes.

  8. Let the rest for 30 minutes. Slice and serve.
