Easy Red Pepper Pasta
Ingredients
What you need:
3-6 Red Bell Peppers
1 Onion
1 Garlic Bulb
1/2 Cup of Olive Oil
Seasonings: Salt and Pepper
Optional 1 Scotch Bonnet (Jalepeño or Habanero will suffice)
Optional: Parmesan Cheese
Instructions:
Preheat the oven to 400°.
Slice the onion into quarters.
Cut the top of the garlic bulb.
On a baking sheet, add the bell peppers whole, onion and garlic.
Drizzle olive oil over all the veggies and salt generously.
Roast the veggies for 12 minutes and turn them over. Roast for another 10 minutes.
Let cool a little and peel the bell peppers. Also, remove the seeds.
Squeeze the gailic interior into a blender or food processor.
Add the bell peppers, onion and Scotch bonnet and blend well.
Taste and season with salt and pepper.
Add the sauce to a frying pan or pasta.
Cook the pasta of your choice until al dente.
Add the pasta to the sauce. Cook for 5 minutes.
Serve with grated parmesan cheese.
