Summer Shrimp Avocado Salad
Ingredients
1/2 Pound of Shrimp
1/2 English Cucumber
1 Bell Pepper
1 Large Avocado
1/4 cup of Chopped Cilantro
1 chopped Jalapeño
Vinaigrette:
1/2 Cup of Olive Oil,
2 Tablespoons of Vinegar
1 Tbsp of Mustard
1 Tsp of Agave
A dash of Garlic Powder
Salt & Pepper to taste
Instructions:
Chop the cucumber, bell pepper, cilantro, jalapeno, and add to a large bowl. Set aside.
Add 2 tablespoons of olive oil to a frying pan and cook the shrimp for 2 minutes on each side. Let cool.
Chop the shrimp and add to the bowl of veggies.
Whisk the vinaigrette ingredients and add to the salad. Mix well and serve.
