Summer Shrimp Avocado Salad

Ingredients

  • 1/2 Pound of Shrimp

  • 1/2 English Cucumber

  • 1 Bell Pepper

  • 1 Large Avocado

  • 1/4 cup of Chopped Cilantro

  • 1 chopped Jalapeño

  • Vinaigrette:

    • 1/2 Cup of Olive Oil,

    • 2 Tablespoons of Vinegar

    • 1 Tbsp of Mustard

    • 1 Tsp of Agave

    • A dash of Garlic Powder

    • Salt & Pepper to taste

Instructions:

  1. Chop the cucumber, bell pepper, cilantro, jalapeno, and add to a large bowl. Set aside.

  2. Add 2 tablespoons of olive oil to a frying pan and cook the shrimp for 2 minutes on each side. Let cool.

  3. Chop the shrimp and add to the bowl of veggies.

  4. Whisk the vinaigrette ingredients and add to the salad. Mix well and serve.
