Chicken Chorizo Risotto
Ingredients
1 cup Chicken Chorizo
1 cup Arborio Rice
1 cup Fresh Spinach
1 cup Mushrooms
4-5 cups of Warm Chicken Broth
1 cup of Parmesan Cheese
1/4 cup Olive Oil
Seasoning: 1 tbsp Salt, 1 tbsp Pepper
Instructions:
Slice the mushrooms to a desired width.
In a pan, heat olive oil and add chorizo. Cook for 10 minutes.
Slowly add the rice. Stir and cook for 5 minutes.
Add 1 cup of broth, a little parmesan and stir.
Once most of the broth has been absorbed, add another cup of broth and parmesan and stir. Repeat until rice is cooked through.
Add mushrooms, spinach and more parmesan. Stir and serve while hot.
