Chicken Chorizo Risotto
Ingredients
- 1 cup Chicken Chorizo 
- 1 cup Arborio Rice 
- 1 cup Fresh Spinach 
- 1 cup Mushrooms 
- 4-5 cups of Warm Chicken Broth 
- 1 cup of Parmesan Cheese 
- 1/4 cup Olive Oil 
- Seasoning: 1 tbsp Salt, 1 tbsp Pepper 
Instructions:
- Slice the mushrooms to a desired width. 
- In a pan, heat olive oil and add chorizo. Cook for 10 minutes. 
- Slowly add the rice. Stir and cook for 5 minutes. 
- Add 1 cup of broth, a little parmesan and stir. 
- Once most of the broth has been absorbed, add another cup of broth and parmesan and stir. Repeat until rice is cooked through. 
- Add mushrooms, spinach and more parmesan. Stir and serve while hot.
