Sunday Hash Patties

Ingredients

  • 2-3 pieces of fresh or cooked salmon. You can also use canned salmon.

  • 1 Can of tuna

  • 1 Cup of Holy Trinity Chopped (onions, bell peppers & celery)

  • 1 Cooked Potato, Chopped

  • 1-2 eggs

  • Seasonings: A tsp of each. Salt & Pepper & All Purpose Seasoning.

  • 1-2 Tbsp of Olive Oil

Instructions:

  1. In a frying pan, add 1 tablespoon olive oil and sauté the Holy Trinity until translucent. Let cool and set aside.

  2. If you are using fresh or cooked salmon pieces, cut them into cubes.

  3. In a bowl, all the ingredients, along with the seasonings and the Holy Trinity.

  4. Gently mix with your hands.

  5. Form into patties.

  6. If there is time, let the patties firm up by putting them in the frig for 1 hour.

  7. Add 1 tablespoon of olive oil to the frying pan and cook the patties for 3-5 minutes on each side.

  8. Serve for breakfast with a side of grits or for lunch with a side salad.
