Cava Bowl with Soul
Ingredients
Crockpot Lamb (See previous recipe)
Greens (See previous recipe)
- Rice of your choice 
- 1 Cup of Grape Tomatoes 
- 1 English Cucumbers 
- 1 Chopped Head of Broccoli 
- 1-2 Yams, Cubed 
- 1/4th Cup of Olive Oil 
- Seasonings: Salt & Pepper 
Lazy Pickled Veggies
- 2 Cups Pickle Juice 
- 1 Sliced Red Onion 
- 1 Cup of Sliced Carrots 
Other Topings
- Hummus (optional) 
- Feta (optional) 
Instructions:
- Follow the previous recipes for crackpot lamb and greens. 
- Preheat your oven to 400°. 
- Add yams and broccoli to a sheet pan. Season with Salt and pepper and add olive oil. Bake for 20 minutes or until tender. 
- Add pickle juice to a small pot. Bring to a boil and add red onions. Let simmer on low for 15-20 minutes. Repeat this step with carrots. These can be kept in a jar with the juice. 
- Cucumber-Tomato Salad: Chop cucumbers and tomatoes and add to a bowl. Toss with cilantro and olive oil, and salt. 
- Build your bowl with rice and greens on the bottom. Add small amounts of lamb, yams, broccoli, carrots, and pickled onions.
