Cava Bowl with Soul

Ingredients

Crockpot Lamb (See previous recipe)

Greens (See previous recipe)

  • Rice of your choice

  • 1 Cup of Grape Tomatoes

  • 1 English Cucumbers

  • 1 Chopped Head of Broccoli

  • 1-2 Yams, Cubed

  • 1/4th Cup of Olive Oil

  • Seasonings: Salt & Pepper

Lazy Pickled Veggies

  • 2 Cups Pickle Juice

  • 1 Sliced Red Onion

  • 1 Cup of Sliced Carrots

Other Topings

  • Hummus (optional)

  • Feta (optional)

Instructions:

  1. Follow the previous recipes for crackpot lamb and greens.

  2. Preheat your oven to 400°.

  3. Add yams and broccoli to a sheet pan. Season with Salt and pepper and add olive oil. Bake for 20 minutes or until tender.

  4. Add pickle juice to a small pot. Bring to a boil and add red onions. Let simmer on low for 15-20 minutes. Repeat this step with carrots. These can be kept in a jar with the juice.

  5. Cucumber-Tomato Salad: Chop cucumbers and tomatoes and add to a bowl. Toss with cilantro and olive oil, and salt.

  6. Build your bowl with rice and greens on the bottom. Add small amounts of lamb, yams, broccoli, carrots, and pickled onions.
