Cava Bowl with Soul
Ingredients
Crockpot Lamb (See previous recipe)
Greens (See previous recipe)
Rice of your choice
1 Cup of Grape Tomatoes
1 English Cucumbers
1 Chopped Head of Broccoli
1-2 Yams, Cubed
1/4th Cup of Olive Oil
Seasonings: Salt & Pepper
Lazy Pickled Veggies
2 Cups Pickle Juice
1 Sliced Red Onion
1 Cup of Sliced Carrots
Other Topings
Hummus (optional)
Feta (optional)
Instructions:
Follow the previous recipes for crackpot lamb and greens.
Preheat your oven to 400°.
Add yams and broccoli to a sheet pan. Season with Salt and pepper and add olive oil. Bake for 20 minutes or until tender.
Add pickle juice to a small pot. Bring to a boil and add red onions. Let simmer on low for 15-20 minutes. Repeat this step with carrots. These can be kept in a jar with the juice.
Cucumber-Tomato Salad: Chop cucumbers and tomatoes and add to a bowl. Toss with cilantro and olive oil, and salt.
Build your bowl with rice and greens on the bottom. Add small amounts of lamb, yams, broccoli, carrots, and pickled onions.
