Egg Muffins
Ingredients
- 8 Eggs 
- 1 Cup of Liquid Egg Whites 
- 1/4 Cup of Soaked Chia Seeds 
- 1 Pound of Ground Turkey 
- 1 Cup of Sliced Mushrooms 
- 1 Cup of Spinach 
- 2 Tbsp of Olive Oil 
- Muffin pan 
- Seasonings: Sea Salt 
Instructions:
- Preheat the oven to 350°. 
- In a frying pan, heat olive oil. 
- Add ground turkey. Cook halfway. Then add mushrooms. Add a pinch of salt. 
- When the ground turkey is cooked through, add spinach. 
- Set aside to cool. 
- In a large bowl, whisk eggs and egg whites. Add Chia seeds. 
- Spray your muffin pan with non-stick spray or rub with olive oil. 
- Add a little of the ground turkey mixture to each muffin cup. Use a ladle to add the whisked eggs to each cup. 
- Bake the egg muffins for 30 minutes. 
- Let cool and store. The muffins will freeze well and can be reheated in the microwave.
