Egg Muffins

Ingredients

  • 8 Eggs

  • 1 Cup of Liquid Egg Whites

  • 1/4 Cup of Soaked Chia Seeds

  • 1 Pound of Ground Turkey

  • 1 Cup of Sliced Mushrooms

  • 1 Cup of Spinach

  • 2 Tbsp of Olive Oil

  • Muffin pan

  • Seasonings: Sea Salt

Instructions:

  1. Preheat the oven to 350°.

  2. In a frying pan, heat olive oil.

  3. Add ground turkey. Cook halfway. Then add mushrooms. Add a pinch of salt.

  4. When the ground turkey is cooked through, add spinach.

  5. Set aside to cool.

  6. In a large bowl, whisk eggs and egg whites. Add Chia seeds.

  7. Spray your muffin pan with non-stick spray or rub with olive oil.

  8. Add a little of the ground turkey mixture to each muffin cup. Use a ladle to add the whisked eggs to each cup.

  9. Bake the egg muffins for 30 minutes.

  10. Let cool and store. The muffins will freeze well and can be reheated in the microwave.
