Sunday Frittata & Prosecco

Ingredients

  • 6 eggs

  • 1-2 cups of Liquid Egg Whites

  • I cup of Mushrooms

  • 1 Bell Pepper

  • 2 cups of Spinach

  • Feta

  • 3 Tablespoons of Olive Oil.

Seasonings: Salt

Instructions:

  1. Preheat the oven to 350°.

  2. Chop the mushrooms and bell pepper.

  3. Lightly sauté the veggies with 2 tablespoons of olive oil. Salt to taste. Try not to overcook because the veggies will continue to cook in the oven. Set aside to cool.

  4. In a large bowl, whisk the eggs and egg whites. Add a little salt.

  5. Add the veggies to a baking dish. Slowly add the eggs.

    1. If you used a cast iron pan or oven-safe skillet to sauté, you can simple add the eggs to the veggies in the cast iron.

  6. Bake for 30-40 minutes.
