Sunday Frittata & Prosecco
Ingredients
6 eggs
1-2 cups of Liquid Egg Whites
I cup of Mushrooms
1 Bell Pepper
2 cups of Spinach
Feta
3 Tablespoons of Olive Oil.
Seasonings: Salt
Instructions:
Preheat the oven to 350°.
Chop the mushrooms and bell pepper.
Lightly sauté the veggies with 2 tablespoons of olive oil. Salt to taste. Try not to overcook because the veggies will continue to cook in the oven. Set aside to cool.
In a large bowl, whisk the eggs and egg whites. Add a little salt.
Add the veggies to a baking dish. Slowly add the eggs.
If you used a cast iron pan or oven-safe skillet to sauté, you can simple add the eggs to the veggies in the cast iron.
Bake for 30-40 minutes.
