Shrimp Pasta Salad & Cava
Ingredients
Cavatappi Pasta
Shrimp - 1 lb (raw with shells)
1/2 Chopped Cucumber
1 Chopped Celery Stalk
Dressing
1 cup of Greek Yogurt
1 tablespoon of Mayo
1 tablespoon of Mustard
1 teaspoon of Lemon Juice
1 teaspoon of hot sauce
A sprinkle of the following to taste
Old Bay Seasoning
Onion Powder
Garlic Powder
Smoked Paprika
Black Pepper
Instructions:
Peel the shrimp and set aside the shells
Shrimp Stock: In a pot, add shrimp shells and a sprinkle of all the seasonings. Cook on low for 5 minutes and slowly top with 1 liter of water. Cook down for at least 30 minutes.
Remove the shrimp shells and all the raw shrimp. Cook until pink, 2-3 minutes. Once done, remove the shells and set aside.
Add the pasta to the shrimp stock. Cook until al dente.
Combine all the dressing ingredients and whisk until smooth.
Remove the pasta and season.
Chop the shrimp and add them to the pasta along with celery and cucumber.
Pour the dressing over the pasta and mix well.
Refrigerate and serve.
